Tuesdays with Dorie: Baking with Julia: 13: Blueberry Nectarine Pie

This week’s recipe is definitely a keeper.  I made a month ago to take to visit some of our favorite people, and I believe we finished it in less than 24 hours.  The crust came together really quickly and required much less water than called for (I actually remembered to jot it down next to the recipe for the next time), and I did have to roll it a bit thinner than I think I’ve rolled a crust before.  But the crust itself was quite forgiving in the plate and I was able to patch wherever necessary without it affecting the final product.

I really liked being able to par cook some of the fruit filling prior to filling the crust.  The fruit has been so ripe and sweet this season that I didn’t want to lose the flavor of those beauties and just have it become sugary, so I only added about half of the amount of sugar.  And adding in the lemon juice bit by bit worked out well, too!  It was a delicious filling and I was a little afraid it wouldn’t make it into the crust…

But, alas it all went in (minus a few spoonfuls).  The top crust went on easily and I used the egg wash as well as a little turbinado sugar to make it even crunchier.  Cooking the pie approximately 24 hours before consumption was a bit torturous,  but the results were divine.  My opinion, make this pie and then enjoy with the best company!
